Named after the beautiful Spotted Gums (Eucalyptus Maculata) on Mount Vincent Estate, these two wines are made from Mount Vincent's trophy winning Semillon and in the case of the Semillon/Verdelho, Mount Vincent Verdelho. The major difference of these 2 wines from all the other wines we have on offer is the residual grape sugar.
We ice concentrate some of our Semillon juice until it is thick like honey. Some of this concentrate is added to the Semillon/Verdelho wine and the rest is fermented carefully until the alcohol level reaches 9.5%. This produces a dessert wine style that is very clean and rich with dried fruit and marmalade flavours. The Semillon/Verdelho is similar to the Watagan Semillon/Verdelho but less dry making it ideal for the wine drinker who wants a little more flavour and fruitiness in their wine.
The aromas of this wine are akin to nectarines and wild honey. This adds to the flavours of sweet peaches and refreshing passionfruit characters on the palate balanced by full fruity acidity. Served chilled as a summer drink and with full flavoured fish and mayonnaise laced salads.
The wine is rich with marmalade and dried fruits beautifully balanced by crisp citrus and green apple acidity. Ideal with dessert but equally good with soft cheeses and fresh fruit.
